Easy Sourdough Infused Loaf

One loaf at a time….

Ingredients:

  • 200 grams of starter, previously fed so it's bubbly

  • 155 grams of water

  • 27 grams of honey

  • 38 grams of butter, melted

  • 8 grams instant yeast

  • 5 grams salt

  • 300 - 350 grams flour

Instructions:

Heat honey and water in microwave and stir until honey is dissolved.

Cool to 110F (43C). Stir in yeast and let sit a few minutes until foamy.

Place starter in bowl of mixer. Pour water, honey and yeast over starter.

Add flour, then melted butter and salt. Knead with dough hook on low for 5 minutes.

Cover with towel and rest 5 minutes.

Knead a further 5 minutes. Remove dough from bowl and shape into a ball. Coat bowl with oil and return dough to bowl.

Cover with plastic and tea towel. Let rise until double, 45 to 60 minutes.

Deflate dough and shape into a ball. Let rest on counter for 10 minutes covered with tea towel.

Grease bread pan and sprinkle with flour (or line with parchment paper).

Shape into a loaf and place in bread pan. Let rise covered, 30 to 60 minutes.

Preheat oven to 375F (190C).

Whisk an egg with a splash of water and brush over top of loaf.

Sprinkle with sesame seeds and make 2 or 3 slashes diagonally across the loaf.

Bake for 45 minutes until golden brown.

Let cool for 5 mins and remove from pan. Let cool another 10 mins at least before cutting in and enjoy with salted butter.
